We are Alan and Nikcy Knox. We have lived in beautiful Kirriemuir for two years. We got married in Forfar a couple of months ago and had a hand-tying ceremony in our woodland near Brechin in June last year. It was amazing.
We found each other during lockdown, and have been inseparable ever since. We both sold our homes, my son got his own place (I brought him up on my own from when he was a baby). We now live mortgage and debt-free, own 4 acres of woodland in Aberdeenshire, and drive around Scotland in our self-converted mini bus camper called Bertie, with our 2 crazy dogs Monty (nearly 14) and Wilson (3).
We are very free-spirited and positive people. We love Kirriemuir and have deliberately set up our business next to the Food Hub so we can help them out where possible. Being part of the community is very important to us. We are having our product launch on 27th February (17:30) in 3 Bellies Bar.
We are very conscious of the food that we consume and try to avoid chemical medication if we can. I (Nikcy) have asthma, and I rely on an inhaler. So we do appreciate that we cannot rely on nature alone.
Alan has not been to a doctor for over 20 years. I am pretty healthy too, although I suffered a very scary asthma attack last year. Alan rushed me to A & E at Ninewells, and they were amazing. This attack was the catalyst to beginning our business. This happened because I had a bad chest infection, which is always a vulnerable area for me.
We started experimenting with apple cider vinegar recipes, infusing them with all the best high-vitamin, nutrient-rich ingredients we could find. Our Fire Cider is packed with antioxidants, antivirals and vitamins.
After about 4 weeks of infusing, we add pure honey and let it become syrupy over 2 weeks. This is the final product. It is recommended that 15ml be taken every day, it’s better on the stomach and added to warm or cold water or green tea.
I started experimenting with cooking with it. It makes a wonderful sticky sauce when added to most meats or vegetables.
We are creating different flavours with various herbs, spices, fruits and vegetables. Flavour and health properties are very important, it is not just a healthy vinegar or a gourmet vinegar.
We will spend this year travelling around Scotland in our camper, visiting shops we hope would like to stock our product. Such as farm shops, delis etc. We will be doing some markets too, we have signed up for Alyth this summer. We will also be joining the Speciality Food and Drink Show at the SEC next year. It was great to see so many artisan makers there this year.
I am a prop maker and graphic designer, and Alan is a photographer and has worked in marketing for many years. He served in the British Army for 6 years, from the age of 16.
